Canning chicken...

Well, I've canned a lot of things over the years, but this year is something new for us!

I've got some hens that will be ending their laying career this spring. I'd like to try canning some of the 'stewing' chickens, but have never done it before.

I've read that it's really good later on for making chicken a la king, chicken soup, chicken & dumplings, etc..

Any canning tips/recipes?

Home-canned chicken is delicious. Makes a great sandwich.

I used to can quite a lot of chicken, and turkey, but I haven't done it in at least 10 years. We had both broiler chickens and laying hens - I found that processing the spent hens was just too much work for the yield - so usually canned some of the large roasting chickens. Perhaps your hens are dual purpose and will have a little more meat on them than a Leghorn.
