Grocery Store Challenge Jan 15-21

My challenge this week is to try to pre-chop, pre-mix, etc all of my ingredients for my meals this week. Sports season has hit and that means my daughter comes home at different times each night - not a regular schedule at all. Some nights early, some very late.

Usually on softball nights, I tend to get lazy and eat out. I can't afford that and hopefully advance prep will make me less inclined to do that.

Wow that was tiring! I just did the following:

:arrow: Chopped all the veggies needed for my recipes this week
:arrow: Boiled some eggs, then made egg salad with some and garden pea salad with the rest (for lunches this week)
:arrow: Boiled some potatoes, made mashed potatoes to serve this week
:arrow: Make two loaves of turkey meatloaf - wrapped one up raw in the freezer for another night, the other is ready to be cooked either tonight or tomorrow night for dinner; once baked, half will be saved for sandwiches later in the week)
:arrow: Made 4 stuffed chicken breasts with gravy (prepped and in the fridge raw, waiting to get baked)
:arrow: cleared out all the old food from my fridge to make room for the food I just prepped
:arrow: washed one load of dishes, one more to go waiting in the sink

I did everything in one sitting, so that I had 1 mess to clean up instead of cleaning up every night. It feels great to have all of my meals prepped and ready to go for the week!

*I also have some chicken breasts ready in the freezer to get marinated for another meal this week, as well as some leftovers I already froze another night that will make one more meal for the busiest night of the week.
