Stretching taco meat
A trick I picked up from a local grocery store to stretch your pound of ground beef for taco night. Add in 2 cups of cooked brown rice to your ground beef when you add your seasoning packet. It's also really nice if you are trying to cut back on red meat intake without feeling like you are sacrificing anything.

Pinto or black beans is another tip. Love the rice.

Good idea!
A really fast and easy way I make taco filling is to use prepared salsa. I cook my meat, then drain of any fat. Then I add enough salsa to fully coat the meat and heat together. This makes a nice filling and it is very flavorful. The salsa bulks up the meat, so you can get away with less meat per serving. I often have leftover salsa in my fridge, so this is a great way to use it up.
