It's May guys, and can you believe it?
May has a few holidays of course to start thinking about - planning a special dinner for your Mom or MIL, maybe a special Cinco de Mayo party, dinner for Victoria Day; and, Memorial Day which tends to mark the start of summer (picnics, cooking out, grilling, BBQ's)
Cinco de Mayo 5th - MOTHERS DAY 11th. we better all remember that - Victoria Day (Canada) 24th - and Memorial Day on the 26th.

But, we all have to eat every night too! So, share your dinner plans. If you are in a rut ... this is a great place to stop for some new ideas.

Well, I could blame it on my sore back ... but, I just forgot. Deepster, thx for the reminder. Yes, IT IS May.

Here is my dinner ... what's yours?

If my back is ok, chicken I have in the freezer pre-marinated (a worcestershire / citrus sauce) skewered with zucchini and summer squash. Also, a side of grape tomato skewers; and mushroom rice.

Maybe leftovers for lunch tomorrow.

I'm settled in my chair or I'd go look at the calendar. It seems like mom's going out for dinner tonight, so if she is I'll just graze. I've got deli potato salad, several kinds of lunch meat, yogurt, and fruit.

If it's tomorrow she's going out, then I'm making Minced Collops (from All Recipes) with some brown rice and a bag salad on the side.

Happy May Day and Beltane if you observe.

I made an egg scramble with feta, tomatoes, scallions, chives, and mushrooms with toast- still not hungry. I imagine it will carry me through to dinner.

Dinner I am hoping to make grilled grouper with pineapple salsa. Not sure about the sides. Maybe rice and salad.

As I mentioned some weeks ago, I have smoked sausage. Well, it's nearing it's expry date!! So, last night I made a "single serving" of sausage, cabbage and fried potatoes......OMG, was it ever good. Tonight, I'm going to do a repeat, with larger portions, as some can be frozen for later. I also picked up the few ingredients I needed for a burrito casserole. I'll may make that tonight too, for tomorrow and later.

Change of plans; massage therapist, felt great, still hurts even a bit more - expected, she really worked it hard. Icy Hot Patch on, and taking it easy.

Dinner - I have a few cheeses, assorted crackers, salami and smoked salmon; also, baby carrots for dipping and hummus. DINNER! I even have melon cut up. DESSERT!
And ... a couple of cold cocktails! :lol: :lol: :lol:

Sue, grouper ... of course living here, it has got to be one of my favorites. Nothing better than an offshore fishing trip, and coming home with bags of fresh grouper for the freezer. Pineapple salsa is wonderful with seafood.

Deepster, that has got to be one of my favorite dinners.

Morning everyone!

Weather will be turning rainy for a couple of days here. although many parts of FL are under severe flooding. It has been dry around me. I looking forward to some rain.

Today ...
Working tonight, and just me. I'm going to pick up a couple of egg rolls and spicy beef. That's it for me.

Today I am making chicken fajita nachos. We had gotten lunch takeout from a Mexican place and they gave us all these chips! Bill loves nachos so this is a way to not waste those.
I have some fennel I want to make a salad with, and also will make a potato salad to have with sandwiches for tomorrow.
Lunch will be some l/o vietnamese pork like a banh mi just different bread (out of french bread) and some raw veggies with dip. Iced tea, but I always drink iced tea with lemon, no sweetener. Today I made it 3 black: 1 blueberry but I have been doing that all this week.

The grouper was great. I made some seasoned black beans for a side and salad. I also did some sriracha deviled eggs yesterday to finish up a carton of eggs.
Deep, I love smoked sausage! I have some in the fridge I will need to cook soon. I may cut it into pieces and grill it like kebabs with some peppers and onions, etc. I already have some peppers in there (on sale this week). Maybe I can do those tomorrow instead of sandwiches, for lunch.

Believe it or not ( do not usualy eat this crap ) I had a McDonalds new "Clubhouse Crispy Chicken with Bacon" sandwich and I did not get heart burn! They are pretty good and like pictured in their commercals! We made an oven BBQed brisket a few nights ago so I vacumm sealed the leftovers yesterday and kept out enough for a hot beef and gravy openface sandwich for me tonight.
