Figured since it was after midnight and I'm up, I might as well post.

If this is really a migraine developing, then I'll be having at best broth and crackers. However, if it's just a stress headache (and I can't imagine why it would be, she said sarcastically :roll: ), then I'll reheat the leftover chicken a'la king.

Morning All ...

Well, almost lunch for me, I've been up since 3:30. Working a wedding today. Luckily, NOT cooking; I sort of organized it, so I just need to make a bunch of calls, emails, and get there to help set up. Then ... I'm outta there.

But, I will get a plate of the food to take home; Hawaiian type of chicken and rice (no, I didn't pick the menu); but, at least I can get some food for dinner.

Me:
Eating my Hawaiian Chicken; and, then going Midnight Fishing with a bunch of friends to hopefully catch fish for our Fish Fry tomorrow night. We have been doing this for the last 8-10 years. Sunday before Labor Day. Looks like perfect weather, so it will be a long day, but fun.We get home sometime early am, usually before sunrise; clean the fish, then head home to sleep a bit before we go back to have our cookout. We do all the cooking right at his house. He lives right on the water; and has a great deck and lanai to do all the cooking on.

- I'm making a jicama slaw; tarter, cocktail and mushroom sauce (Outback style)
- 'Second Mate' and I are in charge of the half stuffed spuds (w/bacon, cheese, sour cream); and corn on the cob too
- The 2 boat captains fry and grill the fish. And the 3rd 'wanna be' captain, is in charge of the fried mushrooms
- The rest bring stuff to make dips, salad, dessert or bread. We never really know what they will bring.
- MOST IMPORTANTLY, PLENTY OF COCKTAILS!

Plenty of relaxing times and good friends. NO complaints here.

Happy September 1st Everyone,

Went out for wings last night so serving "Five Ingredient Crock Pot Beef Carnitas" today for lunch. Very hot here so it is a pool day which looks to be the last of the summer. Issac remains move in tomorrow.

Church, the fish fry sounds great.

Felix, I am sorry for what has happened. Have you had a chance to talk to him?

Felix's post about chicken ala King has me thinking about coming up with a version. I'd try Felix's but I don't have any of that Philly creme stuff (I will have to try that recipe in the future though - saved it, been wanting and excuse to try those cooking creme things).

I have leftover chicken meat from my chicken & dumplings night, whipping cream, some veggies, so going to throw together something ala king-like anyway.

Speaking of migraines - I have one coming on now and it is aching. Took some meds and going to nap if I can.

Morning,

The "Five Ingredient Crock Pot Beef Carnitas" were a big hit with everyone. So easy to make & serve. I have a little juice leftover which I will mix with cooked rice. I served buffet style with 3 different salads plus all the condiments.

Today ast this point I have no idea? I will see what the day brings. Off to look at the weather news which will give me some idea.

Our Labor Day plans have been changed, so we are having
our Labor Day Dinner today.

Morning All ...

Fishing was a huge success. 35ish fish I believe. 3 boats we got out around 10, then offshore 20-25 miles, fished until 3:30. Caught our limit per boat. Got back around 4, cleaned the fish, boat, etc.

Randy's wife, who owns one of the boats and where we started from this am; she made her famous Huevos Rancheros Casserole. SO EASY and delish. I already posted it. It isn't fancy, but really tasty. We had Bloody Mary's, bloody beers for some, and stuffed our face with that and fruit - which tasted really good after rocking around all night.

Home, checked a few emails, and feel asleep for 1 1/2 hrs. We will see how I feel later.

Nin, glad you enjoyed the carnitas; they are just easy and well liked by all. One of those easy dishes to make for a bunch.

Felix, sorry to hear about things; hope you get a chance to talk to one another.

Today ... other than feeling like I could crash any moment from sleep depravation, LOL; just cleaning up a bit; a couple of errands, and then back to my friends around 4 to start cooking for our fish cookout.

Fried and grilled fish, tarter, cocktail, fried mushrooms with outback sauce, velveeta rotel dip, spinach dip, onion dip with chips and veggies, jicama slaw, stuffed potatoes halves with bacon sc blue cheese and scallions, corn on the cob, salad, some kind of dessert, probably hush puppies, BEER, and usually mojitos.

That is the plan, and we usually stick to it, but it may vary. We cook everything at his place. Some kids and adults in the pool, the rest of us cook. We have the turkey fryer going for the fried fish and mushrooms; and the 3 grills for me and my corn, potatoes, and usually something else that some ones brings. Maybe stuffed jalapenos.

Well. Off to get stuff done; everyone have a fantastic Sunday Labor Day Weekend!

I did end up throwing together a version of chicken a la king using up some of my leftover chicken and cream. Didn't end up following a recipe - just laid out my ingredients and went from there. It turned out pretty good and I really don't know if I can repeat it - that happens so often. My food turns out better when I don't worry about measuring things to share recipes, so I often just don't pay much attention to how much I am adding.

Hoping to have meatloaf tonight, but only if I can get a good price on the ground meat I want (I only like to use 90% lean or higher).

Church went looking for "Huevos Rancheros Casserole" but it isn't showing yet. Please post link when it does. Sounds right down my alley & I will serve Bloody Caesars with it.

Wish I had been there for the fishing plus would have loved the fish fry!

Heather planning on making meatloaf this week as Church was making meatloaf sandwiches last week. I have a taste for one of those.
