Re: What's For Dinner?-April 2012
Morning Nin ... Nothing like grilling in the rain
Another warm and sunny day here, but we did get a very unexpected late afternoon shower. Not much rain, but we will take anything we can get.
Another day of just sitting around, not doing much; hard to do anything on crutches, and still waiting to find out if I need surgery. MRI results will be Wed, so they said.
I've been keeping busy running errands, paperwork, filing, and some long due computer work on 2 book reviews and my own cook book, but I just want to go out for a walk or ride my bike which "ain't" going to happen.
Well dinner ...
I planned to make soup today, but don't think I will. I would rather eat my last 2 containers first which are both different, then start fresh next week.
Bread, I have white in the ABM which is almost done.
Dinner:
Zucchini soup from the freezer (it's a healthier version with NO cream), a toasted baguette with mozzarella for dipping; and a small side salad. Romaine with turkey bacon, tomato, cucumber and No Oil Egg Dressing

Oh you just reminded me that I need to bake some bread for my dd's school lunches! I completely forgot!
Tonight I am taking my dd out for dinner or possibly a late lunch, since it is her last day of spring break. It will probably be some form of Asian food or we might try out a new wood-fired type pizza place that opened up nearby. It will be up to dd.

Today is not a winning day. We're doing Winter Jam, which is about 847 Christian bands, $10 at the door, the line was all the way around the arena once and starting a second time when I came upstairs at 3:45 for 4:30 doors. Read: the show is entirely too cheap to feed me, so I had to try to find something open downtown on a Sunday. Turns out that was pizza. At 2:30. I won't be able to eat anything again until at least midnight. NOT amused.

Re: What's For Dinner?-April 2012
Morning everyone!
Another picture perfect day down here, sunny and warm. This morning I put together 2 pans of lasagna for the ladies. NO meat, so with just zucchini and spinach it was very easy to put together. My friend is coming over later to put together a salad and take everything to the gals. She will bake it over there.
Me, still stumbling around, crutches are horrible. I hope to find out if I need surgery or not Wed, just in time for Easter, yippee!
Tonight:
"Shake and Bake," yes, that boxed stuff which I think I used twice in my life. Apparently Dad had a box, which I just found in the pantry. I have some pork loin in the freezer (1/2 of one I didn't use all of it), I'll slice and bake. On the side, my microwave home made applesauce - so easy (new recipe); roasted carrots, nothing fancy (olive oil, s/p)
