Last night, I finally got to make my fish scampi dish; and, tonight it's soup night.
Freezer stash. Earlier this week I made a big pot of soup; chorizo, spinach, onions, celery, red peppers, cannellini beans, dittalini pasta. I froze 4 containers for the freezer. And, I have some garlic bread sticks I made. A bit carb heavy, but, it's a great soup. I may skip the bread and have fruit instead; who knows?
