Thanks, Kim. We got, and continue to get, wicked bad storms. I've been lucky in that everywhere I've been hasn't lost power, but almost everyone around us has. Rain measured in inches, though, and flash flood watches and warnings everywhere.

And I still have no idea what we're doing for dinner. :lol: We're heading to the store in a few minutes to figure that out.

Last night started off to be tuna sandwiches. I was going to make a pasta salad as a side dish with the sandwiches. Well I saw some broccoli that needed to be used, so I cut that up small sauteed with onions, bells, and celery. Added that to the cooked noodles, added tuna, and my new concoction for cream of whatever soup, added some cheese and made a sort of tuna noodle casserole. Oh I also added in a pack of frozen peas at the end. It was good, hot and not sandwiches! :lol: Today we are eating that for lunch. It turned out pretty good and chocked full of veggies.

Tonight? Ha! Not a clue again. I am thinking my spanish rice casserole, as its easy and everyone likes it. It isn't that much hamburger for a whole casserole.

Morning ... Well, I think I have ate out or grazed most of this week. Wed night was different; thurs out of town. NO internet or cable; so, this week has been a total mess.

Today, planned on a lunch for Lady #3. Her family is under water up north, IA I think. So, not coming.
Then, I got invited to a BBQ; so, another NO cook night. Maybe I'll actually cook tomorrow.

My friends, being big fisherman; it will be the same as always (in 5 years, their menu never changes) - but, it's good.

Fresh fish caught yesterday; some grilled, some fried, homemade tarter.
A creamy cheesy baked hash brown casserole; corn on the cob; coleslaw (more vinegar than creamy); watermelon. Plenty of beer and daiquiris.
And ... the guys usually do a few mushrooms in the fryer too.

HAVE A GREAT WEEKEND EVERYONE!

Morning!

The BBQ was great yesterday; I took a green goddess dip with some veggies (carrots, celery, radish, cauliflower, broccoli, and scallions).
Another person who attends every year made his famous fresh salsa and black bean dip with chips.
And, the sister makes her warm crab dip.

Needless to say ... we all pigged out!

Dinner tonight ...
I got a great deal on rack of lamb back in April; so, I cut one up and bagged them up for the freezer.

So, 2-3 chops tonight; marinated in lemon and herbs. Creamy lemony rice with chives; and, a sliced portabello and onions with a balsamic butter in a foil pouch. I also have watermelon for dessert.

I hope everyone has a great Sunday. Go USA (vs portugal in soccer today)!!

The ONLY reason we're having a roast,
because two weeks ago the price was
reduced by half. So we bought 3. 8-)

LMAO at this category. I woke up saying steaks. LOL I have lots in my freezer, bad for hubby yes, but red meat once in a while is a treat. But anyway, thats not what happened. I saw the forecasts in weather...was supposed to be rain. It never rained. So my plans to bbq would have been cancelled. :roll: But I ended up making a chicken fried rice thing. I used up veggies from fridge for this, broccoli, brussels, bells, onions, celery, and peas and carrots from freezer for color. Added rice and chicken and we were eating. It was really good. Hubby even told me that he loved brussels fried in this. He said I will eat them all the time if you make them like this! Success! He ate so many veggies, rice and a bit of sodium with the soy sauce! Very healthy eating night!
