I sort of changed my black bean chili tonight, I added some corn and green chilies; but, still good. I made it yesterday; and, glad it rested over night; because it was a bit spicy yesterday - better today.
I got 4 containers for the freezer which is great. For just me; it makes a great quick go to dinner.

Yesterday I did a small pan seared roasted small pork loin finished in the oven, Italian marinade. Roasted spuds; and a simple 3 bean salad. Nothing special.

Tonight, just a salad. I have some leftover avocado, some salmon to grill, cucumber, radish, artichokes, etc. I might make a green goddess dressing too. Bread is already in the ABM.
What is everyone else up to?

My husband likes lima beans too - so I look for recipes that use dried or frozen lima beans sometimes. My son likes carrots - so this looks like an easy and good dinner.Kchurchill5 wrote:Let me know how that comes out. I LOVE lima beans; that looks so interesting. But, good too!!
