I had guests all weekend and we went out for dinner Friday night. Then yesterday I served up an Italian feast. Started up with tomato, basil mozzarella appetizers with home made salami, then served up some straciatella soup followed by Caesar salad. The main meal was pasta sauce over spaghetti with loaded garlic bread. For dessert I served an angel food cake with strawberries and whipped cream. We were all stuffed! Today we had leftovers.

I am leaving for a couple of days so no cooking until Wednesday.

Pretty cold here in NE Ohio. -10 F this morning with wind chill down to -27. I'm sure you Canadians have it worse, and I sympathize with you. So tonight, I made my Awesome Sausage and Lentils soup and had some French bread with it. Sure warms your "innards"!

Other side of the state (SW Ohio) and I am making breaded oyster po' boys and Cajun wedges.
With blues-zydeco music for ambience.

Shapes what a great way to use up your chicken.

QB, definitely a feast; it sounds delicious. I bet that home made salami was TDF. Lucky guests.

Lovin ... Pretty cold. That is just frosty! Way too cold for me. Soup is always the best when it is cold out.

Sue, po boys are the best. I usually order those out ... since I hate to deep fry at home; but they are sure good.

Morning ...

Dinner, I just did an egg, spinach, tomato scramble; fried spuds, etc. Easy and tasted good.

Tonight, another easy night. Turkey noodle soup (freezer stash); grilled cheese (fresh mozz, tomato, pesto). Plenty of fruit for dessert.

Tonight I'll do a baked spud topped with chili/beans, cheddar and sour cream. Roasted Brussels sprouts with round out the meal.

Deepster, your spud sounds good. I have some chili in the freezer as well.

Me, easy dinner for me. Leftover chicken paprikash and noodles from Sun. A salad on the side.

Ladies #1 and #3: Meatball subs; homemade chips and refrigerator pickles; rice pudding

Lunch was baked cod, also potatoes gratin.
Dinner is still up in the air--I want to do chicken but I need to shop for that and the roads are still bad outside (new snow on top of some ice) and now it is blowing and drifting. Semi's were backsliding on the interstate where there were hills. Not good.
So maybe something else.

I made corn chowder last night. So, tonight it will be corn chowder with corn bread. I'll toss in a bit of fresh chopped baby spinach before putting the bowl in the MW. The thing I like most about corn chowder is that you can really vary it by adding a serving of other ingredients in on a per serving basis. I like to add smoked salmon sometimes, or oysters, ham, etc., etc., I'm also going to make a pot of beef/veggie soup tonight. I have beef that really must be used today, or it'll have to be tossed. Lots of freezer stash stuff :D

I am cooking the beans for chili. I was only going to do half a pound of pinto and half a pound of kidney, but wasn't thinking and dumped both in the pot of water. Thats going to be quite a bit of beans! :shock: I will freeze half for another pot of chili or some soup. I was going to make potato corn chowder, but have no milk. It is -8 now with a windchill of -29 below, so anything not to have to leave the house! Well atleast more than I have to. I do have some rented movies to return, so will get milk then, but that is going to be later, and it will be even colder after the sun goes down! :| They are predicting 27 for Friday, wow what a welcome change that will be! \:D/
