Re: What's For Dinner?-September 2012
I just tossed a jello mold into the freezer and am hoping for the best. Well, maybe not the best... but at least edible results. Testing out a really old recipe that sounded great to me until I got to the "add mayo" part. This is for a jello fruit salad mold that gets frozen. I almost didn't add the mayo, but I was worried it might not set properly without it. Kind of thinking I should have added sour cream or something like that instead. I'll find out tomorrow when it has frozen and I can give it a taste.
If my dd finds out there is mayo in the fruit salad, she's going to freak out. My tongue might freak out too, come to think of it.
In any case, jump started tomorrow night's dinner by making the dessert ... erm... salad.. erm... mayo ice cream??...in advance.
Something tells me I had better make a lot of extra mashed potatoes ...

AC, down again; hot and sticky, but guy is coming this afternoon. That means I can't go to work but oh well; I guess I will be doing as much as possible from home.
I made a new pizza recipe yesterday which I really enjoyed. Proscuitto and butternut squash with red onions. Really tasty
I will have to post it. The squash was really good.
Catered Brunch - NOT Lunch:
Fun today ... it is a Bagel Works Bar with a greens topped with a baked tomato topped with a poached egg.
The tomatoes are baked and topped w/Feta, bread crumbs and parmesan served over baby mixed greens with a champagne vinaigrette and a poached egg on top of the tomato.
The Bagel bar has 4 different kinds with smoked salmon, cream cheese, capers, red onion, pickled cucumber and a dilled sour cream. They can help themselves.
Fruit salad, juices, coffee, tea, etc.
Ladies #1 and #2:
Spinach, tomato, and zucchini lasagna; marinated roasted artichoke, tomato, and mushroom salad; garlic bread
Me: Depends on the AC guys, if I have air or not and what time they leave.
I could make chicken salad, soup, grill some salmon or pasta; we will have to play it by ear.

Continues to be very humid with no breeze.
Washed the linens & towels earlier. Off to run errands this morning. Have leftover pasta which will do for dinner. Lunch will be a bacon & tomato sandwich. Just going to make a fresh loaf of bread now.

Dinner tonight is going to be either salmon cakes or tuna cakes, depending on which kind of fish I find in the cupboard first, with a creamy dill sauce. Bag salad and some other vegetable on the side.
It is so humid I feel damp just sitting here. Not supposed to rain until Friday, though.
