I know. In our store lamb goes in the discount rack, so when it does I stock up.

At Easter, Sams Club or Costco usually gets in the AUS racks of lamb. One pack of 2 racks (8 or 9 chops each) for $22-26; I usually stock up on them. I cut them in groups of 3, and vacuum seal. They last a good 6 months or more. They are a special treat now and then.
But, I do love the ground lamb. I see it occasionally on the discount rack too. I do that as well.

Sometimes lamb stewing meat is available. That can be ground too which works.

Today ...

Me: Working lunch out w/coworkers, their choice; dinner ... probably just some cheese/crackers/sausage, fruit, etc

Went to Outback yesterday for my birthday (68th...YIKES!). I don't know where the time went. It's all a blur.
Today I'm going out with the girls for lunch for Chinese and will bring supper home for my husband. They always serve too much, so I'm sure I'll have enough leftovers for dinner too.

I have lots of ground beef I got on sale so gotta use it up, something easy stove top like Hamberger Helper type of meal, any suggestions? thanks
