I'm doing a BBQ pork plate with cole slaw and fried yellow squash. The BBQ is leftover from yesterday's slow cooked BBQ pork roast. I often keep slaw around, just because I like it. I really would have liked hushpuppies, but not enough oil on hand. But, that's OK :!: I don't do enough fried foods as to know when I have run out. Of course, for the squash, I did slices and browned them in bacon fat.....Mmmm, Mmmmm :D

Turns out she expects to eat today, too. After exploring the refrigerator, I think we'll be having leftover vegetable-fake crab stir-fry and some un-potato and/or broccoli-carrot salad. I guess. This having to come up with dinner every day thing gets much harder the day before grocery day.

Yesterday, a friend gave me a couple of bags full of cucumbers, yellow squash and green tomatoes....from her garden. Tonight, I'm doing a very simple meal of fried green tomatoes, fried squash and homemade biscuits. I wash it all down with some sweet tea, and back up everything with some fresh cantaloupe :!:

Deepster, I am so loving the garden things coming ripe. I made a cucumber salad tonight, some vinegar in cucumber. I left the zucchini alone as dh kinda threw a fit. I think he has had enough for one day. Tomorrow though I plan to make fried zucchini, breaded crappies, pan fried and coleslaw.

Tonight we had goulash. Last minute meal threw together quickly. I was going to add zucchini and dh didn't want that, tired of it, I guess. So I left it out. We had cucumber salad and goulash.

I've got some marinara sauce I want to do something with...but the only meat I appear to have is bacon, smoked sausage, and cod. I cannot see any of those things working. Grocery day got delayed until Friday, so I'm having to reinvent cuisine in ways it was never intended. :?

Or, you know, I'll go in a completely different direction having unearthed a package of boneless skinless chicken thighs from the freezer. :lol: I'm doing Turkish Chicken Thighs (from F.com) because I also have some Greek yogurt to use up.

Unfortunatly I am at the wifes mercy when it comes to items to cook with, digging in the freezer has yielded many a surprise Felix !
I would have used your sauce with the smoked sausage over pasta.

I would've loved to do pasta, but alas...the dreaded carbs rear their ugly little heads. :( I stuck it in the freezer for later use.

True, but with a 25g per plate limit, moderation virtually never can include pasta. I make do. :)
