GW, that sounds like a good meal, especially for 100+ degree weather. I just could not live with that kinda heat. And, yes, some will tell you it's different because of low humidity. But, I have been there, and it's still hot as Hades no matter how you cut it.....Bummer :( I live at an elevation that rarely sees temps out of the 70s. But down the mountain a few miles upper 80s and some low 90s are frequent in the summer. I just try to stay around the house :) I never have to worry about the oven heating up the house, as I have all windows and doors open all the time.

Hot here today, but sunny and windy, so it doesn't feel as hot as it is. I have my windows open. I didn't "oven" cook, just made chili dogs. Very good. Hadn't had those in a long while.

It's terribly dry here . . . EXTREME fire conditions. There are a couple burning already in the state. It's usually August before we get this dry. Hope it rains soon!

I don't mind the heat . . . after 30+ years guess I've gotten use to it. Obviously we don't do any gardening during the hottest part of the day . . . but by this time (5pm) it's pretty pleasant in our back yard, which faces East. Very nice in the am too . . . goes to the mid-70's a night, so we get up early to walk, ride bikes, etc. About died from the humidty in Europe last week . . . it was 90+ each day with about that much humidity.

Wow, what's your altitude? Our place up in the mountains is at 7,000 and we get heat there . . . never made it to 100 yet . . . have seen it at 99!

I do enjoy the heat, but sometimes, it is just hot. I was outside doing some yard work; and it was 90 outside, head index of 97, 90 humidity. My inside heat was between 86 and 88 tday. I did get it down to 83 tonight.

We close the windows here in May, and they don't open up until Oct usually.

Dis, chili dogs sound good! One of our favorite emails at our lake skiing was chili dogs, onion rings, and corn on the cob. Still is a fave.

Kim, sometimes we get so caught up in cooking, that we forget that sometimes the classic easy meals are just as good!

Agreed Dissie . . .I almost felt guilty today because I wasn't "cooking". My daughter and grandson are coming in this weekend for 10 days, so I'll get in lots of 'cooking'.

Kim, looks like you have auto correct turned on. . . not sure how 'emails' fits in! :D Hate that when it happens to me!

NP Kim, I knew what you meant. I read typonese! I noticed it but my brain told me what it said. ;) Usually I am getting ready for bed, but dh is off tomorrow, so I get to sleep in till 5 am! So I get to stay up later....I also got home earlier today because he got a ride home as they got out early. SO I feel like I am in heaven. Been home for hours, cooked chili dogs, ate, went out to visit my mom, watered garden with her, harvested fresh lettuce, rhubarb and green onions, visited with her neighbors Julie and Greg, got my free turkey burgers, came home, and still have time to sit around on the internet! AMAZING to me! Loving it!

I went to the store to pick up a few basics and decided to grab a bottle of Indian curry sauce. We have quite a bit of Basmati rice to use up, I had those chicken breasts thawing, and so I scrapped the broccoli casserole idea and made Indian curry tonight. Those bottled sauces are really only ok-ish. They don't taste bad, but they don't taste anything like a curry from an Indian restaurant either.

Anyway, the whole thing cooks on the stovetop, so I didn't have to deal with the oven.

Found out my BF doesn't object to chickpeas, since he ate the whole thing without complaint (other than remarking that all those bottled Indian sauces taste exactly the same to him). I didn't have any other suitable veggies, and so I simmered the chickpeas in the sauce along with the chicken.
