Sunny and warm today, 88-90 today, but we had some really good storm yesterday afternoon, hopefully we will some more today. Afternoon rain is a good thing for my plants.
Busy day. Last day of my Lunch Group, so we have another nice lunch on the beach for them. Me, I believe Happy Hour Out; if I decide to eat with the lunch group, I probably won't have much for dinner; if I just snack on a few things, then I will probably eat more out, or depending on the weather may grill something ... there is always the umbrella.
Catered Lunch: Steak, Spuds, and Salad
Spinach balls with a spicy warm creamy cheese dip
Mini fillets, wrapped in bacon, on the grill. Served with a peppercorn sauce, brandy mushroom sauce, or a creamy mustard.
Traditional caesar salad
Mini baked stuffed spuds (lunch size) with bacon, cheese, sour cream, and chives
Ladies #1 and #2: Card/Game Night
My Buffalo Baked Hoagies (shredded chicken in a buffalo sauce; shredded lettuce, onion, and grated carrots; provolone cheese, blue cheese dressing mixed with celery). Cut the roll and brush the roll, inside and out with a mix of the wing sauce and toast on both sides. Top the bread with provolone, warm chicken, cheese, lettuce carrot salad, blue cheese sauce and top.
Pickle dip with chips
Curly fries
Beer cheese soup to start
Me: Out I think for HH; or weather dependent, I may grill - my back up is a grilled cornish hen, butterflied with an orange glaze, stuffing, and cooked carrots I think.
We can always do the chicken tomorrow

Edit:
Stew it is. I just realized I made in on Sunday, so today is absolutely the last day for it outside of the freezer. So be it.

Now, I'm home waiting on the lawn crew and the AC guys; I got someone to fill in for me, so I hope all is well. A bit pissed, because I was really looking forward to it. Homeownership first.
NO cost for me, but they need to get inside, so ... someone's got to be here. It will be fixed today, just aggravating; however an accident, so **** happens.
One crew is out digging up my lawn, the other will come after they are done. Looks like I'm not going anywhere for a while.
Dinner, therefore is probably my cornish hen on the grill, rain or shine.
Stuffing, a mix of my own bread crumbs, some leftover stove top, my own veggies, broth and hopefully that works.
Roasted carrots I think
I'll just invite my friend over for wine later ... cheaper than going out ... and probably more fun. He'll bring a movie or something
ies
and mushrooms and hopefully that works

Perhaps tonight we will have the pork fried rice.

Inv, I'm so sorry, but glad to hear nothing serious - take care of yourself
Felix, I love Rascal Flats, I'm envious.
Yesterday, my whole day got screwed up. The sprinkler guys managed to cut a water line doing maintenance, and it was a water line to my AC. So, I had to wait around for both of them to mix everything. I ended up having to miss my last Catered Lunch for the gang, which I was really pissed about. However, I did get to go and set up and enjoy a glass of the sangria which started the day. Then my co-workers and a couple of others filled in for me. I guess it went well.
Happy Hour was cancelled, due to my friend who was sick; so, I planned my dinner; which also changed. My son stopped over, so I changed my sides and glaze for the chicken to what he preferred. Still good. Just a crazy day.
Today ...
I honestly don't know. I have 1/2 of my cornish hen left which I could use in a wrap. I could also make a fried rice with the chicken, rice and peas; or, I could add some black beans, onion, roasted red pepper, corn, and cheese, maybe green chilies to my peas and corn and make a southwest stir fry. Maybe even some diced Mexican tomatoes.
I guess I will decide what I feel like tonight. I have everything on hand, so it will just depend.
