Didn't get to make the soup yesterday; so today it is. Happy hour with a potential catering client, so no food. Probably a beer and some nuts. So, soup will be great when I get home.
Sort of a Caribbean Soup
Leftover black beans (already flavored with garlic, lime and oj, cumin, onion, cilantro; then, freezer stashed smoked chicken, sweet potato, onions, celery, sweet and jot peppers, broth, cilantro, coriander, and allspice.
Served over my leftover Caribbean rice which is in the freezer.
It is a leftover night for sure. Fruit for dessert.

I'm going to do poached salmon, steamed baby carrots, fresh steamed asparagus and lemony avocado slices.

Tasted wonderful, we both wanted seconds but there was none left. I did brush them with BBQ sauce for the last few minutes under the broiler. Unfortunately, my catering meeting/happy hour turned in to a light dinner. Luckily, we went to the place across the street. Diner food which is good. So, I had chicken, spuds, gravy and salad. Way too much for me, so I brought 1/2 the chicken home. It was good. Soup will be tomorrow. But, I ate lunch, and didn't expect to have dinner that early. I have plenty of leftovers.

Heading to a pumpkin festival later with a friend and her kids. Should be fun. Crafts, pumpkins, food, etc ... typical festival stuff!
Dinner, soup I made yesterday. This am, I made a small tub of my Pub cheese. So, I will have cheese and crackers as well to graze on tonight.
Still 80, and breezy, AC off and loving the weather. The yard needs a little TLC, so that is on my list after laundry is done.

I had a grand and wonderful plan for dinner. And then my incredibly inconsiderate sister invited herself and her family over at 6pm so we can give her daughter presents. Why 6pm? It's convenient for their dinner reservations. Nevermind that we are then forced to eat dinner more than an hour later than normal, and that I cannot cook while they are here (it is considered rude to cook in front of people you have no intention of feeding). I.Am.Livid. My next day off is November 7.
