Ninner, its a huge adjustment to go from being MOM to just wife again. When my kids moved out, I was lost at first! Cooking huge meals for just 2 of us! DH put on weight!
At first there weren't many calls, then they got homesick and started coming home more frequently and calling often!

I'm making Singapore Chicken if it kills me, dammit! Otherwise, I'll have to throw away the chicken I got out of the freezer early Tuesday morning.

I am roasting a chicken and potatoes. Veggie undecided. I also really want to bake bread tonight but with a chicken in the oven I don't know that this is feasible.

It's hard at first, but give it 3 months and you'll be doing the happy dance, LOL

I've been cooking a lot of stews and chilli's lately as the weather has turned really cold here of a night. So, I think a change is needed today.....Strip Steak, baked potato and some kind of veggie for tonight's meal.
Good job I got off early from work this afternoon as I forgot to take the steaks out of the freezer this morning..... Blonde moment here.....

Good Morning Everyone it is Ninner The Empty Nester.
Thank you for the words of encouragement Denise. I really do need them & I know you are right. Due to all the packing my house looks like a tip but I do not give a poop. Plus at this point in time I have no intention of cleaning it up.
Dh took me out to The Ship (seafood) last night. It is a place we go often run by a young chef that I like. Dh told the female bartender that Dd had left so it was free drinks on the house for the evening. I had the cajun gumbo & the poe boy catfish sandwich both were very nice.
Tink the weather here has turned cold. Frost on the ground so chili & stew sound good.
Dinner will be grilled hamburgers that I made yesterday. Plus it will be a movie night.
Have a great weekend everyone!

Assuming I really do have a few hours off between shifts this afternoon, I'll be making
Easy Salmon Cakes with
Creamy Dill Sauce and a couple of vegetables.
Today is the Spectrum Health Service Awards Dinner at our convention center.
