That such a nice thing to do Felix. Fritatta sounds good to me. I'm just getting ready to head to my friends BBQ, just a quick beer and to say hi; haven't seen them in a while.

Morning!

I hope everyone had a nice weekend. I had fun at my friends BBQ yesterday; didn't plan to stay, but was forced too. :lol: :lol: :lol:

Had some great food; not dinner, but all the appies; played croquet which was a blast and went 4 wheeling in the mud. Not for everyone, but it was so much fun.

So, last night, just a bowl of my mac and cheese; and that was plenty.
Back to my meatloaf tonight, roasted potatoes, and planned on carrots; but, more corn on the cob. It is so sweet right now.

Leftover pecan chicken with a couple of microwaved frozen vegetables. This week we added three new exercises at physical therapy, and on top of the walking on uneven ground most of yesterday I'm pretty sure I'm gonna die. Hopefully that will change after some ice and ibuprofen because I have plans tonight.

I'm celebrating National Hamburger Day by trying a
new recipe for a Cajun/Creole type burger. If it
works I'll post it. :D

To bad I had meatloaf last night. I might have to make burgers this weekend.

Today ...
Lady #1: Meatloaf; roasted rosemary potatoes; peas, shallots, and lima beans
Lady #2: Meatloaf; creamy horseradish potatoes; peas and carrots
Me: Pot of lentil soup; cheesy bread; fruit

Thanks, Kim. It's a little better today, but I certainly am glad it's an off-and-on rainy day so I have an excuse to not work in the yard. I'm equally grateful I don't have PT again until Friday.

I wish I could do burgers! Ground beef is so darn expensive, though, that we only buy it for special occasions. We've actually had leg of lamb more often because it's cheaper. :shock: Instead, I pulled some #recipe12196 out of the freezer, which I put in there as an experiment to see if it does well with freezing. If the pasta sucks, I still have some #recipe12619 I can quick heat up. The chicken should be fine.

Glad you feel better today Felix. PT is a PIA, really. At least, relax today; and freezer dive. I'm doing a pot of soup ... but most will go in my freezer for later too. I love freezer diving.

Hopefully the pasta comes out well. And ground beef; yes. I have been getting mine at Walmart in the tube; probably not the best, but affordable. I don't use it that often; but, when it goes on sale, I get the family pack and package it up.

Making tacos these days are expensive ... with limes and ground beef, :lol: :lol: :lol: :o. I'll stick to more chicken and fish I think.

I made jalapeno glazed polish sausages/brats for dinner along with cajun style corn. Stuffed.

Sounds good Sue; gorgeous night here, so making my soup on the grill. Storms all around, but we are in the clear. I guess I should get going.
