Hi QB, nice to see you. I'm trying to loose a bit too, and exercise more. I could never give up carbs lol; but, I need to just watch more what I eat.
Chicago, nice to see you too! We are happy to see you whenever you can. Glad you had a nice xmas and NY. Also, happy your house is almost done. I know that can be a pain to deal with; especially around the holidays too.
Dis, with just me; I am constantly enjoying leftovers. I never mind.
Today ... I was hoping to get the smoker out today; but, someone forgot to take the chops and chicken out of the freezer. Oops. So, they are coming out today; and, I can brine tomorrow am.
Ladies #1+2, #2+1, and #3+1: All getting the same thing.

It's a smoking day (day on the smoker). 72ish, perfect weather for it. The chicken will take about 4 hours, the chops almost 3. Brining in water, apple cider, salt, sugar, and peppercorns.
The chicken has a citrus rub; stuffed with onion, orange, and herbs.
The pork a spicy brown sugar and herb rub.
On the side - grilled corn on the cob, grilled cabbage wedge with a Vidalia onion dressing, and applesauce (my home made freezer stash)

Today is meat loaf and mashed, probably with tossed salad. I make a lot of salad as it goes with everything!

I hope everyone in the north is bundled up. Some brutal temperatures; and nasty weather. Stay safe!
My smoked dinner was delicious; and weather was cooperative.
Tonight ... cookies for both ladies and me.
Ladies #1 and #2: Mojo grilled chicken quarters w/pineapple mango salsa; rice pilaf; sauteed sugar snap peas and carrots.
Me: I''m doing a casserole experiment. I have a little cooked chicken, fresh mushrooms, milk to use up; and, spaghetti cooked in the freezer.
So, sort of a baked saghetti casserole. Making a bechemel with parmesan; and toss in the rest. Top with cracker crumbs maybe and bake. NOT a huge pan, a 9x9.
On the side; a simple salad.
