That is a perfect way to make it. For a real crispy skin. Salt it the night before; and DO NOT cover. Then, drizzle olive oil over the top and season right before cooking. Your skin will be crispy brown.

But, I love butter / herbs under the skin!!! Adds lots of flavor. Also, always add a onion cut up, more fresh herbs or pieces of citrus too in the cavity.

Love love cabbage. Sausages and cabbage were always a staple when I grew up. Mom would cook them in beer w/a little stone ground mustard, with potatoes and onions. I still love that dish. Good comfort food.
