What WAS on Your Plate & WHAT'S for Dinner 11/1-11/2

HAPPY TUESDAY EVERYONE!
Well, It Seems I Forgot Yesterday - I Was Sure I Posted, But, I Guess Not ... Oops!

Yesterday ... I made a new Sausage Tortellini with Pumpkin Alfredo for one of the ladies.
For me, I planned Teriyaki Grilled Shrimp w/Pineapple; but, ended up with soup and a salad.

Today's Cooking ...
Just me today; and, back to my Teriyaki grilled shrimp and pineapple skewers. Scallion or coconut rice; and, sesame snap peas and mushrooms.

No real recipe on the shrimp; just teriyaki sauce, garlic, oj, red pepper flakes.
The sesame peas and shrooms, is just sesame oil, onions, garlic and red pepper flakes, sauteed.
The rice. 1/2 coconut milk and 1/2 water; cook accordingly; add macadamia nuts and scallions.

We are having a pizza for tonight dinner, adding lots of topping so it will make a main meal for us

It's roasted chicken and twice baked potatoes tonight 8-) and also some veggie not sure yet I better decide soon though :?

Today's Cooking ...
Lady #1 and BF: Special dinner - DD, SIL and BF's DS, SO joining them for appies and drinks.

Appies - A whole sea scallop stuffed in a mushroom, baked w/herb vinaigrette and crunchy topping; marinated mixed olives w/thin toasted crostini; 2 mixed nuts; asparagus goat cheese puree on black pepper crackers w/crispy pancetta

Tonight will be old school: chicken thighs, mac n cheese and throw some green beans onto the plate for the healthy aspect.

Thx MM, glad to see you. I love old school too; my ribs, baked spud qualifies for that. Chicken and mac sounds good.

And, thanks ... The lady, she and SO have been together a long time. They still live separately, and plan to. But, tonight is their anniversary of meeting in a park under a tent (which trying to recreate). His present, a 1 month cruise overseas - after the holidays - followed by another trip to Ireland soon after than. She will be over the moon.
And, first time that her dd and so; and his ds and so have been all together. They all visit; but, never made it together. So, will be really special.

Shanni, roast chicken is one of my most favorite meals. When I make mine, I mix some finely chopped fresh rosemary, thyme and lemon zest with some soft butter and put it under the skin, and on top of the skin. What flavor!
