What WAS on Your Plate & and WHAT'S for Dinner 8/25
Today's Cooking ...
Lady #3: A version of http://www.foodnetwork.com/…/e…/cajun-j ... cipe2.html, my version which I have to write down and post. It's similar, but quite different. Then, a fruit salad.
Me: Meatballs w/roasted tomato/pepper sauce; grilled romaine w/olives, cucumber, onion w/parm dressing; corn on the cob.
From my tomato and pepper crop this past spring a roasted variety of tomatoes/peppers w/garlic and herbs. Then, I turned that into a sauce by adding, wine, fennel, onion, more garlic and fresh herbs.
So, that is the sauce; no pasta.
Also, found out a friend is in serious condition after surgery. So, making mom a thermos of tomato soup and sandwich; for the neighbor taking care of her 4 kids ... chicken soup, sandwiches, salad; and, taking ice cream, whipped cream and cherries.
