What WAS on Your Plate & and WHAT'S for Dinner 7/10

HAPPY SUNDAY EVERYONE!!! SO, WHAT'S EVERYONE UP TO TODAY?

It's hot, sticky, and a typical summer in FL. 90+, and 80+ humidity. So, leftovers and grilling is what I am doing most.

Last night, had the best fish, chips, and mushy peas out at a local Pub. Something I don't make at home, so it was good.

Today ...
Lady #3: http://www.recipezazz.com/recipe/creamy ... ooms-24194; classic caprese salad w/balsamic drizzle

Me: Spinach, sun dried tomato, and mozz stuffed chicken breast; creamy dittalini pasta w/pesto (a simple mix of pasta, pesto; and, a splash of cream), so easy, but so good; cauliflower.
Since chicken will be on the grill; I will probably do a foil packet of the cauliflower too.

No recipe for the chicken filling. Just mix a bit of this and that.

Fresh tomato sauce, I had an abundance of red ripe tomatoes that was given to me earlier this week, I made it last night so were going to have it for dinner, garlic bread and salad to go on the side :)

Last night, I was making pickles, so dinner was super easy - ground turkey tacos. It's getting hot here in So Cal, so taking the cooking outside. We'll grill chicken parts and have a huge garden salad on the side. I've got a recipe for a grain casserole I might try for another side - we'll see how warm the afternoon gets. ;)

Thx SJ, nothing too hard tonight. But, since I have been doing leftovers for a few days; I wanted to cook something, LOL.

This time of year ... I love the grill too. Burgers always sound good!! I just happened to have a lonely chicken breast to use up ... so, it sort of made the plan for dinner. And, I have pesto to use too. So ... dinner picked me tonight.

Manadoo, lucky you!!! Our tomatoes are done here, mid to late June. We replant in September. FL is too hot for summer tomatoes. Fresh sauce sounds delish.

Diane, I know about the heat, trust me. 94 right now and over 113 heat index and climbing.
Pickles, I love homemade pickles .... YUMMY!!!
I love anything grilled this time of year as well. Even though my house has central AC ... I still love to cook outside when I can.
Salads are always good this time of year.

I hear that you guys are really sweltering, I feel sorry for you, I can't even grill when it's that hot my face feels like it's on fire :o

Cooking a whole salmon fish tonight also a garden salad and who know what else.
