Another Day ... Another Dinner!
Pretty easy here; a busy day.

I have catfish in the freezer; so, I'm thinking a couple of catfish cakes, cucumber salad; and, buttered parsley new potatoes.

It's salad tonight! LOVE your cute kitty!

Chicken Bacon Club Pasta Salad


Ingredients

Honey Avocado Dressing (recipe below)

16 oz mini shell pasta, cooked and cooled
6 slices of cooked bacon, chopped
2 cups of cherry tomatoes, halved
1 1/2 cups colby jack cheese, cubed
2 cups of spinach, chopped
1 1/2 cup chicken chopped
salt and pepper to taste

Instructions

Place the cooked pasta in a big bowl and add the dressing a little at a time while stirring until evenly coated, about 1 cup. next, add the bacon and toss it, add the tomatoes, cheese, spinach and chicken to the pasta and season with salt and pepper to taste. chill before serving, up to one day ahead or at least 20 minutes.

Honey Avocado Dressing

1/2 avocado, chopped
juice of one lemon
2 teaspoons garlic, minced
2 tablespoons honey
2 tablespoons mayonnaise
pinch of salt

instructions

Throw all of the ingredients in a blender and blend until smooth and no chunks remain. add a little more honey if your avocado wasn't ripe enough and the sauce is a bit to tart.

Thanks Kchurchill5, I am a cat lover so that is the first thing I noticed, I love the name Cloudy that is so original! me to I love salads I eat them all year round, in winter it's usually soup with them :D

Tonight, my GF is coming over after work, I have cabbage rolls left over from yesterday and I'm making a pasta salad with my cream Italian salad dressing recipe (posted here), and bottle of wine...should be a nice evening :D

Tonight it was a frittata with sausage, onions, green and red peppers and crumbled goat cheese. Also toasted ciabatta rolls.

Tonight having a rice casserole, doesn't sound interesting, I'd must prefer a steak :lol: I had some leftover rice I had to use
