What WAS on your Plate & WHAT'S for Dinner Tonight 2/20

Happy Saturday Everyone!!!! What's Going on This Weekend?

Well, today should be fun!!!
Going Camping mid today/tonight; and moonlight ziplining.

Lunch - just made http://www.recipezazz.com/…/chicken-qui ... nut-squash… After we set up the tent and site; we will eat lunch, bike ride; then, relax until ziplining.

Dinner - After ziplining, back at camp. I'm taking my small fire pit which has a rack; so, we will cook on that.
- 1 foil pouch for each of us: Chicken breast w/Mexican sauce (made a puree of fresh tomatoes, roasted red peppers, chili powder, garlic, and cumin); and, a pouch of mixed peppers and onions
- Grilled romaine (from the garden) topped with ... a mason jar of toppings. Lime vinaigrette on the bottom - layered with black beans, corn, cucumber, avocado, red onion, cilantro. Just shake, and pour over the grilled romaine.
- Corn and flour tortillas, grilled
- Mexican hot chocolate w/tequila

Weather, 70's, low mid 50's perfection!!!

That looks like fun KChurchill5!

tonight we are having hotdogs and Beans :D

1 - 16 oz package good quality hot dogs, sliced
1 - tablespoon butter
2 - 3 - 15 oz cans pork and beans
1/4 - cup brown sugar
1/4 - cup bbq sauce of your choice
1 - tsp mustard


Cut up all the hot dogs in bite size pieces.

In a large skillet add melt 1 tablespoon butter.

Add the sliced hot dogs and saute' until very lightly brown. Set aside when done.

In a large bowl add the pork n beans, bbq sauce, brown sugar, and mustard; mix well.

Add hot dogs and mix to combine. Pour the mixture into a 8x8 inch baking dish and bake at 350 degrees for 20 minutes or until bubbly.

We like Red Robin too -- it's been a while though. We go right after the movies as it is in the same shopping center. Have to go again soon!

Grilled some burgers tonight also with some grilled peppers and a few beers, good dinner ;)

I made a chicken on the rotisserie tonight with some creamed spinach and rice

Red Robbin ... I love red robbin. We have one right across from the theater too. We would go there after a movie too. Banzai is my fave; but, I can only eat half of it!!

Creamed spinach is something I love; but, don't make too often - but love it.
