Nice to see you Rosegirl!! Always great to see what everyone else is making.
I love a good baked spud ... but, of course I have to load it up with butter and sour cream, lol.

Good weekend here; been a bit busy; but, I'm just helping tonight ... so, I get to have some fun too.

Kind of a cool but sunny day here in NE Ohio. So it's chili tonight with corn bread. I always separate my egg, add the yolk when the recipe calls for the egg, whip the egg white and fold it in at the end. Makes it light, moist and fluffy. Also add in some whole kernel corn and cheddar cheese.

Sounds delish; I bet that would be a great cornbread. I often use creamed corn in mine. But, there probably isn't a cornbread I don't like. And cheese makes everything better, lol.

Chili is always a win win dish for me. Still in the 80's, high 80's here. Fall has arrived yet. I wouldn't mind it a bit cooler since it is Oct. almost Nov.

Morning, well actually afternoon. A late start today in posting.
It was definitely rainy all day yesterday, night, and early today; so, my plans changed.

Today's Cooking ...

Lady #1: Also making one for Lady #2 to take over on Thurs - http://www.recipezazz.com/recipe/basic- ... e-pie-7891, but using mushrooms, spinach, potato, swiss; and topped with fresh tomato slices. And, a citrus salad

Me: I know I just had spinach salad the other night; but, it tasted so good. I guess I am just in a salad mood. Spinach/Romaine mix, chicken, walnuts, oranges, red onion, cucumber, black olives, and poppy seed dressing; crusty bread - something like that.

I just feel like something light.

I can't believe October is almost over. Tonight we had breaded baked tilapia, baked parmesan zucchini slices (sliced into 1/4" circles, placed on cookie sheet sprayed with Pam, brushed with olive oil, salt, pepper, garlic powder and grated parmesan cheese on top, baked at 400°F for 30 minutes or until golden brown), and carrots http://www.recipezazz.com/recipe/honey- ... rrots-6490. Still have few fresh carrots left in the garden.

Tonight I made grilled chicken breasts that had been marinated in orange juice, a little sriracha sauce, minced garlic, honey, low sodium soy sauce, oil, pepper, and dried rosemary. Also made sauted cabbage with onions bacon bits, salt, pepper, caraway seeds, oregano and chicken stock.
We don't get trick or treaters since we live on a busy street with no sidewalks, so I bought each of us a candy bar for tonight.
