Ellie, you know I love my sandwiches. Tomorrow night are sandwiches for me.

We make 2-3 small pots of soup ... like tomato, potato, and onion. Just plain, so good for dipping the sammies in.
Then, we offer a couple of breads, rolls; condiments; a few cheeses, onions, tomato, bacon, etc ... Fun stuff like mango chutney, nuts, apples, raspberry jam, pesto. Not just the basic stuff. And, we let everyone make up 2-3 sandwiches. Then, we cut them all in 4 pieces. Everyone can take and taste whatever they want.
We usually serve a salad or some fruit; and, everyone gets involved.
It's inexpensive, easy, quick and just a lot of fun. To make it easy; we grill all the sandwiches on the sheet pan in the oven.

The famous 1905 Columbia salad and Cuban bread for lady #3.
Me, easy peasy. Leftover pork loin in the freezer as a sandwich. Some BBQ sauce, apple slices, grilled onions and white sharp cheddar. On the side, a vinegar based slaw. Easy night.
