Thx, so does yours. I've had a few Costco items; and, they have always been good. I do love catfish. I try to pan saute vs frying; and, use a mix of cornmeal and flour w/cajun spice. I usually just saute a 1/2 of lemon in the pan for some flavor; then, squeeze it over the top. It's bit healthier than tarter and just as good.

Tonight: porkchops and apple and carrot salad. Ice cream for dessert.
Your catfish sounds wonderful - I don't use tartar sauce but my husband doesn't think it's fish without it!

Ellie, I love tartar too; but, on certain fish. I love a good perch or trout pan fried with tartar. I just don't make it that often. I love to squeeze a grilled lemon over the fish; especially with a spicy corn bread fish like the catfish. Healthier and better on some fish.
Tilapia, snapper, and flounder, even salmon; I have found the fruit or veggie salsas or relish to be really good.
But, I have a couple of friends ... and if there is NO tarter. they won't eat the fish!!!

Made a stuffed pork chop with rice, spinach and citrus; glazed with a citrus vinaigrette. Served w/roasted cauliflower and roasted herb tomatoes.
Me, easy ... meat loaf sammy and potato salad. Easy and good.

I love meatloaf sammy - during the summer when everyone is home I don't get to have any leftover meatloaf - but it's my favorite sandwich when school is in session!

When married I always made 1 extra meatloaf; just for sandwiches. I used to cut it up in baggies for leftovers.
Now single, I make them in those mini disposable loaf pans. I make 4-5 at a time. 1 is perfect for dinner plus a sammy!! The best stuff. It is so comfort food.

I'm playing "cheaters" all the way 'round tonight. I really want to put a few meals in the freezer. So, tonight, two "blue boxes" of mac 'n cheese, plus extra cheese and evaporated mild, 1 lb. ground sirloin, and a can of diced tomatoes. That'll be the main meal along with "cheaters" cole slaw.....1 lb. cabbage and carrots from the grocery with mayo, onion, sesame seeds...a touch of salt, sugar and LOTS of fresh ground black pepper. I'll finish off the slaw within 2-3 days, and the mac 'n cheese can be frozen. Summer has truly made me one lazy person. Though it doesn't get very hot at this elevation, the humidity is an energy zapper. I'm amazed that we are fast approaching the end of summer, and it seems like it just now got here....

Fresh peaches from Georgia are in. My husband bought 25 pounds off a truck that came up from Georgia. And boy are they sweet and juicy. Processed some of them to put in the freezer for this winter.
So tonight I made Belgian waffles with cinnamon and fresh grated nutmeg, topped with caramelized peaches, and bacon. Then later on, we're going to have some fresh peach cobbler with vanilla ice cream. Definitely not healthy. But, once in a while, you just have to splurge! Right?! ;)
