Acadia - Do the recipe use potato 'flour' or potato starch? They are two very different things. If it's starch, you could just sub tapioca starch or arrowroot. I'll let someone else with better info answer that. All I know is that a lot of people who go off of it have their health problems cleared up (and sometimes they go off of dairy too - another big allergy food). Celiacs can't have a crumb of gluten or they get really sick. If you're just 'intolerant'...

I just tried a gf/cf/sf/egg free cookie recipe in the dehydrator. It turned out awesome! I'm going to have to buy more of those plastic sheets for the dehydrator to make a bigger batch. When the recipe posts, I'll try to remember to put it here.

Jelly, Did you use a flour blend that had some high protein flour in it? I wonder if that would help or not. GF recipes can sometimes be tricky. This is very good, and a no bake recipe to boot. Just make sure you keep them in the fridge, as coconut oil tends to melt easily.
