Coconut Chicken Fingers with Chilli Sauce

Ah. Homemade Coconut Chicken Fingers. Ya got to love them. First, plain and boring or secondly with a little chili sauce and perhaps some cajan spice and you are on your way to a little blitz in heaven. Two problems here though. I am not a fan of the first kind and this recipe has nothing to do with a scrumptious dipping sauce. A nice addition, yes, but not a main part of this dish. Or is it? What's in the dish?

  • coconuts
  • coconut milk
  • coconut oil (get the feeling that there is lots of coconuts? Ya, there is!)
  • chicken
  • cayenne pepper and more!

I wish I could just chalk it up to the sauce having a nice color tone for the photo of the recipe, and indeed it does, but that is not the only reason. In my household, many of the dishes that I prepare cater to what does wifie want for dinner, what does our little picky eater want and what do I feel like. In that order. Seeing that I like spicy foods loaded with interesting flavors and they do not, food can be a bit boring where I live. There is a little East Indian bistro not far from my work that I love to frequent. A lot! Okay, I digress, back to the recipe. Coconut Chicken Fingers. But loaded chili sauce and spices for the dip please. Yum! The very first thing about this recipe is the larger than life title. That is a mouth full! The second is the surprising flavor that the chicken fingers delight you with. Did I mention that they are really good? They are really, really good! The kind you would expect from a food truck worth it's sweet potato fries! And I am talking about a specialty food truck that only serves tasty things. Speaking of tasty things... I tried battered fried pickles for the first time a couple weeks ago. I almost refused. Somehow in my brain I was thinking that they would be really gross, but to my surprise, I actually liked them in a weird sort of way. I mean I was glad I did try it but would not have missed it if I hadn't. Not so with this coconut chicken fingers recipe. Onwards! Pass the coconut please. This recipe calls for coconut. And lots of it! If you are a fan then you are going to want to keep reading and try this for yourself. When you think of coconut milk you might be reminded of Thai recipes that often call for coconut milk. Not for chicken fingers. But it really works here. For this recipe to be a success ya gotta not skimp on this ingredient. Trust me.
