Cheesy BBQ Melt Burger Recipes

Cheesy Melt Burger This fantastic burger recipe ups the ante when it comes to great burger recipes. There is only one method to cook this style of burger and that is on the BBQ. Any other way will totally destroy the purpose of great taste! One of the great things about this burger that really packs a punch is having the cheese in the center of the burger. As it goes through the bbq process, the cheese melts in the middle and the trick is to make sure that it does not ooze out while cooking. Another great thing here is that you mix raw bacon rather than bacon bits so while the burger is being grilled, the juices (AKA: FAT) gets seeped into the meat. Not a bad thing for flavor as you really get that full bacon taste! Really is yummy!

VC Burger Spice

We all know that to make great burger recipes you have to use that "special ingredient". Well, this one calls for VE Burger Spice from Victorian Epicure Inc. We tried to find the spice on their website, but it appears it may no longer be available. If you cannot find it, you can always opt for Weber Burger Spice. A couple of members who reviewed the recipe said they substituted with Weber and it still tasted fantastic. So give it a try! You may also want to try this wonderful Southern Barbecue Seasoning to all kinds of meat and poultry for a smoky, sweet and bold barbecue taste. Get it here now. Preparing Burger Adding Cheese Inside of Burger Flamed Broiled Burger Enjoying A Burger Along with the burger spice the recipe calls for a Raspberry Habanero Sauce by The Pampered Chef. You can find the sauce here. It is really quite delicious and adds a bit of a bite that is not too spicy but gives off a great flavor. It is different than barbecue sauce in that it is not just a smooth thick liquid but rather has raspberries in it.

Ingredients
  • 1 tablespoon VE Burger Spice (spices, onion, garlic, red bell pepper, sea salt, herbs, black pepper)
  • 1 pound ground beef
  • 1 egg
  • 1 cup Stove Top Stuffing mix
  • 2 slices bacon
  • 1/2 cup cheddar cheese (cut into 4 thick squares, from old cheddar block cheese)
  • 1/4 cup BBQ sauce (I used Raspberry Habanero Sauce by The Pampered Chef)
Instructions
  1. Put ground beef in bowl
  2. Add one egg into the bowl
  3. Add spices
  4. Add stuffing (uncooked)
  5. Cut up the uncooked 2 strips of bacon into tiny pieces – the juice (fat) from the bacon gives a great flavor while burger and bacon are cooking
  6. Add bacon pieces in the mixture
  7. Knead all the ingredients to point it is combined well
  8. Take a handful of the burger mixture and shape it into a round burger
  9. Take one of the cheese squares and pat into the burger
  10. Add more of the burger mixture to the exposed cheese, covering it well. Be sure that the cheese is well protected as you do not want the cheese melting and escaping the burger!
  11. Heat BBQ to around 350 degrees – nice and hot
  12. Place the 4 burgers onto the grill – about 5 minutes per side
  13. Flip burgers and coat with the sauce
  14. Do same on other side
  15. Garnish your burger with your favorite toppings

This is burger heaven! On a trip across the country we once had a 50/50 beef/bacon burger. We were discussing how to make something ourselves that had similar results with the bacon flavor infused into the burger. This is it!

I love how versatile this recipe is, since we have a couple of kids with food allergies.

Thank you so much! My husband thanks you, too!

I can't imagine 50% of the burger being bacon! Somehow that sounds delicious though :) Christy, you may want to check out the recipes by Bergy. She has tons of burger recipes on the main part of our site.

I hate it when I go to a BBQ party and the burgers are flat, burned and tasteless. And when I say flat, I mean that they are itty-bitty, skinny burgers and of course there is no way to make them juicy.

But now I have the secret weapon! Of course I'll reveal it (under duress), but this recipe will really give me the edge this summer.

WHO SAYS WOMEN CAN'T BBQ? Of course we can (especially when Wayne is our silent partner.)

Thanks, Wayne!

The use of the stuffing mixture in the burger blend is absolutely genius! I cannot wait to give this recipe a try when my husband fires up the grill this summer.... Thankfully, that seems to be right around the corner for me here in Tennessee.
Everything about this recipe - from the cheese to the BBQ seasoning to the stuffing - just SCREAMS delicious!
