Breakfast for dinner: omelette for myself with bacon, peppers, onions, cheese. Bf had French bread pizza since he isn't an egg fan.
Also felt like making a quickie dessert - just sliced bananas topped with a bit of dark chocolate chunks and mini marshmallows baked in the oven just until melted and warm. I liked how it tasted, although the bananas released a ton of juices in the baking dish which was unpleasant. Bf ate it but said he didn't want that one again.

Finsihed off the last of the Baked Ziti/Baked Zucchini last night. Hopefully tonight my chicken will be thawed enough to make Chipotle style chicken bowls (chicken marinated in a chipotle marinade, cut up then put in a bowl with Mexican rice, cilantro corn, pico de gallo, pinto beans, and guacamole). Made this several times before and it usually turns out rather well. The marinade is just some chipotle sauce and lime juice with a little salt and pepper.
