Ingredients

The ingredients are:
  • 4 chicken breasts (cooked and finely cubed)
  • 3 cups rice (cooked white or brown)
  • 1 rib celery, finely chopped
  • 2 cups grapes (red grapes)
  • 2 cups fresh pineapple, cubed
  • 2 cups mandarin oranges, (canned mandarin oranges, drained)
  • 1 cup slivered almonds
  • 1/4 cup sugar
  • Salt, to taste
  • DRESSING
  • 1 1/2 cups mayonnaise (don't use the lower fat)
  • 2 tablespoons oil (vegetable or other cooking oil)
  • 2 tablespoons vinegar
  • 2 tablespoons orange juice concentrate (from a can)

How to Make

  • Step 1: Toast the almonds in a small nonstick pan with 1/4 cup sugar until the sugar dissolves and coats the almonds. Let cool.

  • Step 2: Combine the chicken, rice, celery, grapes, pineapple, oranges and almonds together in a large bowl.

  • Step 3: In a small bowl mix the salad dressing ingredients together.

  • Step 4: Mix the salad dressing with the salad and toss well.

  • Step 5: Add salt to taste.

  • Step 6: Chill or serve immediately.
