Ingredients

The ingredients are:
  • 1 medium tomato, seeded, coarsely chopped
  • 4 ounces feta cheese (Canadian feta cheese, crumbled)
  • 3 ounces ham, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh parsley
  • 4 large eggs
  • 1/3 cup milk
  • Salt and pepper to taste
  • 4 teaspoon butter
  • Parsley to garnish

How to Make

  • Step 1: Mix together the tomato, feta, ham, onion and chopped parsley, set aside

  • Step 2: In a separate bowl whip together the eggs and milk season with salt and pepper

  • Step 3: Melt the butter in a large skillet over medium heat.

  • Step 4: Pour in the egg mixture, tilting the pan to let the egg cover the whole surface.

  • Step 5: Cover the pan. cook until it starts to set

  • Step 6: Add the feta, ham mixture, fold in half

  • Step 7: Do not over cook the omelet

  • Step 8: Cut in half and slide onto 2 plates

  • Step 9: Garnish with parsley
