"Very nice combination of eggs, ham & Feta cheese. Perfect for Brunch, Lunch or Dinner The recipe is from The Canadian Dairy association with a couple of changes by me. If you wish use salami instead of ham. If you do not have a really large skillet cook two separate omelets, just cut everything in half and follow the same steps. I like to add 3 tablespoon sour cream or cottage cheese and 2 tablespoons of flour to the egg mixture, beat really well. This makes a slightly heavier omelet but we like.it"

Step by Step Method
Step 1
Mix together the tomato, feta, ham, onion and chopped parsley, set aside
Step 2
In a separate bowl whip together the eggs and milk season with salt and pepper
Step 3
Melt the butter in a large skillet over medium heat.
Step 4
Pour in the egg mixture, tilting the pan to let the egg cover the whole surface.
Step 5
Cover the pan. cook until it starts to set
Step 6
Add the feta, ham mixture, fold in half
Step 7
Do not over cook the omelet
Step 8
Cut in half and slide onto 2 plates
Step 9
Garnish with parsley
