Ingredients

The ingredients are:
  • 2 cups potato, baked (leftover diced baked potato, if you want you can leave the peeling on)
  • 2 tablespoons butter (or margarine)
  • 2 tablespoons all purpose flour
  • 1/2 to 3/4 cup half & half (you might need a little more to get the proper consistency)
  • 1 teaspoon ground black pepper, or to taste
  • 1 teaspoon salt, or to taste
  • 4 ounces Velveeta cheese, cubed
  • Cooking Spray
  • 1 1/2 ounce cheddar cheese, sharp shredded(you can use more if you like )
  • 1 teaspoon smoked paprika, optional

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: In a medium sized saucepan over medium heat,add margarine and melt.

  • Step 3: Add flour and stir until light in color and flour taste has cooked out.

  • Step 4: Stir in half & half, a little at a time until desired thickness is reached.

  • Step 5: Remove from heat, and add Velveeta a little at a time stirring until completely melted.

  • Step 6: Place potatoes in pan with cheese sauce,gently stir until potatoes are well covered.

  • Step 7: Place into a 2 quart baking dish which has been prepared with cooking spray.

  • Step 8: Top with shredded cheese & paprika, then bake at 350 degrees for 30 minutes or until top is golden brown.
