Step 1: Whisk together the eggs and salt and pepper; spray a 10 inch frypan with veggie spray and heat; to medium hot. Pour the egg mixture into the frypan, swirl the mixture around the pan, move the eggs with a spatula and swirl the uncooked portions of the eggs into it, for about 10 minutes.
Step 2: When the eggs are about half set place the asparagus evenly to cover half of the eggs; top with the sharp cheese; fold the uncovered half of the eggs over the asparagus and cheese.
Step 3: Place a lid on the frypan and cook for 5 minutes or until completely set and cheese is melted.
Step 4: Serve hot.
