Ingredients

The ingredients are:
  • 1 1/4 cup sorghum flour (plus a little more if the batter is too wet)
  • 1/3 cup flax meal, oat bran, psyllium husk powder (one or a mix of all three)
  • 1/2 tablespoon calcium powder (optional)
  • 1 tablespoon cinnamon
  • 1 teaspoon ginger
  • 2 teaspoon xanthan or guar gum
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/4 cup oil
  • 1/2 cup maple syrup or honey
  • 1 egg, beaten

How to Make

  • Step 1: Pre-heat oven to 350 degrees. Combine dry ingredients in a small bowl. Combine wet ingredients in a larger bowl.

  • Step 2: Add dry to wet and combine. Add a little more flour if it looks to thin or wet.

  • Step 3: Drop by Tbsps on a parchment paper lined cookie sheet, 2 inches apart. Bake for 14-17 minutes, until almost firm.

  • Step 4: Remove, let sit for a minute, then transfer to wire rack to finish cooling.
