Step 1: Hull the fruit, save a dozen whole berries for garnish.
Step 2: Liquidize or mash them and pass them through a fine sieve to remove pips.
Step 3: Beat in the sugar until dissolved, add water (if using) and strained lemon juice and pour into a freezing container.
Step 4: Freeze for 40 minutes.
Step 5: Remove and beat with a "silver" or "wooden" spoon and freeze again for 4 hours.
Step 6: Serve in tall glasses.
Step 7: Garnish with whole berries.
