Ingredients

The ingredients are:
  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons all-purpose flour
  • 1 tablespoon fresh thyme, chopped
  • 1 3/4 pounds potatoes (small new potatoes, apprx. 8 new baby potatoe halved)
  • 2 teaspoons lemon zest
  • 1 1/2 cups yellow onion chopped
  • 1 1/2 cups carrots, fine sliced
  • 6 garlic cloves, minced
  • 2 bay leaves
  • 2 cups chicken stock (sodium reduced)
  • Salt and Pepper to taste

How to Make

  • Step 1: Place the flour, thyme, salt and pepper in a plastic bag. Add chicken and shake well.

  • Step 2: In a 3 quart Crock Pot add your potatoes, carrots, garlic, lemon peel

  • Step 3: Top with the dredged chicken

  • Step 4: Pour in the broth, add bay leaves

  • Step 5: Turn slow cooker to low and 6-7 hours later Mmm dinner
