Ingredients

The ingredients are:
  • 2 large skinless, boneless chicken breasts, cut in half horizontally
  • 1 tablespoon brown sugar or splenda brown sugar sunstitute
  • 2 tsp chili powder
  • 3/4 teaspoon garlic powder
  • 2 cups mango, pared, cut into 3/4 inch cubes
  • 1/4 cup Mango chipotle dressing or 2 teaspoons mango chipotle spice mix
  • 1/4 cup red onion chopped
  • 2 tablespoons fresh cilantro, chopped
  • Spray of olive oil

How to Make

  • Step 1: Mix together the brown sugar, chili powder and garlic powder

  • Step 2: Rub the mix into the chicken breasts (both sides) and let the chicken rest in the fridge for 10 minutes.

  • Step 3: Meanwhile combine all the remaining ingredients, except the spray of oil.

  • Step 4: Spray a large skillet with oil, medium high heat and cook the chicken for about 4 minutes each side or until done (170 degrees)

  • Step 5: Serve the chicken topped with the Mango Salsa, enjoy
