  • 2 tomatoes, thinly sliced (roma)
  • 1 bell pepper (red or yellow bell pepper, julienned)
  • 4 scallions, shredded
  • 2 fresh red Thai chilies, thinly sliced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh mint
  • 3 tablespoons soy sauce
  • 1 tablespoon vinegar (rice vinegar)
  • 1 tablespoon Splenda brown sugar (or brown sugar)
  • 1 teaspoon fish sauce
  • 1 lime (zest and juice from)
  • 1/4 taspoon garlic paste
