Step 1: Mix together the water, vinegar, salt, sugar, turmeric and pickling spice packet in a saucepan and bring to a boil.
Step 2: Reduce heat and simmer for 15 minutes; remove spice bag and cool liquid.
Step 3: Place the bay leaf onion and eggs in a large mason jar and pour cooled liquid over the eggs making sure they are completely covered.
Step 4: Refrigerate for at least 5 days before serving, these get tastier the longer they sit in the jar.
