  • 2 pounds potatoes (bakers work best)
  • 1 tablespoon butter
  • 2 tablespoons chives, snipped
  • 2 tablespoons parsley, chopped
  • 1 to 2 tablespoons milk
  • Freshly ground pepper to taste

How to Make

  • Step 1: Scrub the potatoes and cut into medium sized chunks, leaving the skin on.

  • Step 2: Boil in salted water until fork tender. Drain and return to the pot; return pot to warm burner. Add the rest of the ingredients and roughly mash with a hand masher leaving some lumps. Keep warm over burner until ready to serve.

  • Step 3: Serve with more butter if desired.
