Ingredients

The ingredients are:
  • 2 1/2 pounds boneless lean pork shoulder (or loin)
  • 1 pound pork fat (fresh pork fat in cubes)
  • 1 1/2 cup dry bread crumbs
  • 1 1/4 cup chicken broth
  • 3 1/2 teasoons Banger seasoning
  • BANGER SEASONING
  • 5 teaspoon ground white pepper
  • 2 1/2 teaspoons mace
  • 2 1/4 teaspoons salt
  • 2 teaspoons ground ginger
  • 2 teaspoons rubbed sage
  • 1/2 teaspoon nutmeg

How to Make

  • Step 1: Grind pork and fat together using fine disc of meat grinder.

  • Step 2: Add Banger Seasoning. Mix well.

  • Step 3: Grind again.

  • Step 4: This mixture will be too fine to form into patties.

  • Step 5: Force mixture into casings and tie in 4-5 inch lengths.

  • Step 6: Bake or saute.
