Ingredients

The ingredients are:
  • 1 1/3 cups all purpose flour
  • 1/2 cup Splenda granulated (or sugar if you like)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups mashed bananas
  • 1 tablespoon oil (canola oil)
  • 1/3 cup low-fat buttermilk
  • 2 teaspoons vanilla
  • 1/2 cup chopped walnuts

How to Make

  • Step 1: Preheat oven to 350f degrees.

  • Step 2: Spray a 9 x 5 loaf pan with non stick cooking spray; set aside.

  • Step 3: Add the dry ingredients to a large mixing bowl; set aside.

  • Step 4: Add oil, buttermilk and vanilla to the mashed bananas; mix well;

  • Step 5: Pour the banana mixture into the dry ingredients; stir just until mixed, do not over mix. Stir in the chopped walnuts.

  • Step 6: Por batter into prepared pan, bake in preheated oven for 40 to 50 minutes or until a tooth pick inserted in the centre comes out clean and the loaf is golden brown.
