Step 1: Season the meat with salt and pepper. Place in a non-reactive dish and add enough beer to coat the meat (drink the remaining beer). Cover and marinate in the refrigerator for at least 2 hours.
Step 2: Remove meat from marinade and drain very well. Discard the marinade.
Step 3: Heat a large skillet or griddle, a cast iron skillet works very well. Add the oil and heat thoroughly. Add the meat and brown on one side.
Step 4: Turn meat over and add the onion; cook for a minute. Lower heat to medium and add the bell peppers; cook until the bell pepper is tender.
Step 5: Add the chopped tomato and the lime juice. Check seasoning and adjust to taste.
Step 6: Cook until meat is done and vegetables are tender. Serve at once with warm tortillas.
