Ingredients

The ingredients are:
  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • Grated rind of 1 lemon
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • Glaze:
  • 1/4 cup sugar
  • Juice of 1 lemon

How to Make

  • Step 1: Preheat oven to 350ºF. Grease loaf pan well.

  • Step 2: Cream margarine, sugar, eggs. Add lemon rind. Mix dry ingredients together. Mix in alternately with milk. Spoon into loaf pan.

  • Step 3: Mix sugar and lemon juice together, let stand while loaf is baking.

  • Step 4: Bake 50-60 minutes. Pour glaze over loaf while still in pan. Let rest 10 minutes. Remove from pan.
