Step 1: Onions ... Melt the butter and a pinch of sugar in a nonstick saute pan on medium heat. Then, add the onion slices to the pan, and saute for 10-15 minutes until golden brown, stirring often. You want them lightly caramelized.
Step 2: Peaches ... Add the peaches to a small casserole dish, lightly sprayed with a nonstick spray. Season with a pinch of salt, pepper, and herbs de provence. Top with the onion slices, and cheese.
Step 3: Bake ... Preheat the oven to 400 degrees, and bake on the middle shelf for approximately 20 minutes; until the cheese is melted, golden brown, and bubbly.
Step 4: Serve and ENJOY! ... Serve with rustic bread or crackers. Great for an appetizer, first course; or, even dessert.
