Ingredients

The ingredients are:
  • 1 teaspoon canola oil
  • 1/2 cup onion, diced
  • 1/2 teaspoon cround cumin
  • 1 dried bay leaf
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1/2 cup corn kernels, frozen, thawed
  • 1/4 cup scallions, chopped
  • 1 teaspon garlic,minced
  • 1/2 teaspoon dried epazote (or dried coriander or dried oregano)
  • 2 teaspoon lime juice, fresh
  • Salt and freshly ground pepper to taste

How to Make

  • Step 1: Heat oil in a small saute pan over medium heat; add onion, cumin and bay leaf; cook until onion softens, about 5 minutes.

  • Step 2: Stir in beans, corn, scallions, garlic and epazote and cook until heated through, 2 or 3 minutes. Discard bay leaf and stir in lime juice, season with sal and pepper
